While we killed time, Ethan stoked our interest in Carlos’ Famous Squid And Rice (a name I coined for this piece, not one invented or necessarily endorsed by anyone in the band, especially Carlos), the dish we planned to enjoy that evening. He prepared said dish at least a handful of times for the band, most recently while recording their third, not yet released album at a home studio upstate.
“I guess it’s a childhood favorite of his,” Ethan said.
“[What you want is] squid in its own ink,” Felicia clarified.
