In general, quesadillas can be kind of a hit or miss proposition. You never know exactly how big they'll really be, or if they'll be filled with vegetables that have been cooked to the wrong texture and tossed in as a clumsy afterthought. At Calexico, though, they as huge as they are perfect, and come smothered in a spicy "crack" sauce. You can fill it out with meat or grilled vegetables, but their basic cheese version doesn't need much help, and adds oaxacan cheese to their usual blend of cheddar and monterey jack.
