No. 1
Roasted blue hubbard squash “pesto” with fresh sage, toasted walnuts, parmesan and New York maple syrup with a slice of house-pulled mozzarella, gratineed.

No. 2
Confit of Dines Farm pork shank served with a fresh horseradish-scented mashed potato, sautéed Brooklyn Grange Kale, grilled local apples and topped with a horseradish root/apple gremolata and apple-pork reduction.

No. 3
Oven-roasted Dines Farm chicken served with Israeli couscous tossed with roasted tomatoes, dried apricots, mixed olives and fresh herbs.

No. 4
Local baby wild arugula with shaved cherry bell radishes, winter squash crudo, shaved parmesan and roasted lemon vinaigrette.
