The comment about "looks like a donkey, with a monkey..." That means the same thing it did when the Ying Yang Twins refered to female genitalia as a monkey. Use a little imagination and you'll get it (side view, as if she's laying on her hip) ;)
As far as "watch me make a movie like Alfred Hitchcock", it's pretty simple. You're overthinking it. It's just another way to use "cock", since the previous line uses or insinuates it twice.
