There's quite a lot going on under the umbrella of Red Hook's Cacao Prieto, a multi-pronged company that produces a delicious line of chocolates, unique liqueurs and the outstanding Widow Jane whiskeys, named for the Rosendale, New York mine that produces the particularly clean, desirable water they use in the distilling process. Their 7-year bourbon is unbelievably smooth, with mild sweetness and a subtle fruity character, perfect for sipping or mixing. They also produce a rye version, which is similar in profile, with an substantial spiciness that lingers in the back of the mouth.
