The potato and egg hero with mozzarella at Defonte’s menu is one of those foods that is so much greater than the sum of its parts. It’s huge, available at the crack of dawn and the preferred morning meal of local cops and construction workers. Since the shop is right off the BQE, it’s the perfect breakfast if you’re heading out of town on a road trip. For an extra $1.50, you can add some ham. Whether you’re braving the weekend brunch wait or snagging a seat more easily on a weekday, the country ham biscuit is worth your trouble. The ham is imported from Princeton, Kentucky and served on a biscuit with house-made fig jam, Grafton cheddar and a side of grits. Served Monday through Friday from 7am to 6pm, Saturdays and Sundays from 8am to 6pm, $9.
