Unlike some vegetarian standouts in this city (Blossom, Candle 79), Dirt Candy isn't interested in the ersatz meat dish—nor are they particularly interested in health food. Instead, chef and owner Amanda Cohen focuses "on what you can eat, not what you can't" and applies haute cusine inventiveness to just about every vegetable you can think of. And it is glorious.
