Perfectly-poured cocktails at bargain-bin prices are the main draw, but the food offerings at Fort Defiance are nothing to scoff at. The muffuletta, piled with cured meats, cheeses, and olive salad, was reverse-engineered from the superlative sandwich at Central Grocery in New Orleans. Salads picked fresh from the nearby Added Value farm and daily specials like red beans and rice or rabbit and chorizo hash round out the menu.
