Among the many different businesses housed in Sunset Park’s Industry City is the Industry City Distillery, a collaborative effort from the guys behind The City Foundry, “a research and design group focused on improving small-scale manufacturing processes through the blending of science and art.” Which, all right. A blend of science and art for the purpose of making alcohol sounds pretty cool to us. But what about the booze? Can it live up to the hype? Industry City Distillery only makes one spirit—vodka—and it has brought out several batches of its product, they’re constantly refining and improving upon. The iteration that we tasted, No. 4, is distilled from beet sugar using techniques they’re constantly refining and improving upon in order to create as pure of a product as possible. In short, Industry City Distillery has created a vodka that tastes just like vodka should. Well, it’s not even a taste really, so much as it is a feeling. Tilting your head back and drinking a No. 4 martini is like tilting your head back and swallowing the blade of a particularly sharp Russian dagger; it cuts through you like a blade, just like you want vodka to do. It’s hard to wonder how that can be improved upon, but we’re eager to find out.
